It certainly could be done that way, if you have the fabrication tools.
You could simply use a flat mounting plate and a couple pieces of
angle-cut tubing. The only problem would be that the tubes would run
into each other at the airbox unless you mitered them where they met.
The only other down side that I can think of is that this arrangement
might make it more difficult getting things apart, but you can always
remove the carbs, manifold-and-all in order to get at things.
