Hi John,
Could the throttle twistgrip cover plate be bowed out slightly or not seated
in the retaining groove on the end opposite the screw? Correct me if I'm
wrong, but it looks like the cover plate is supposed to keep the ball in the
socket (or at least help) through most of the cable travel.
I've never (now knocking on wood) had a problem with any of the stock throttle
or enricher (choke) components. As Dave said, two twists of the throttle and
it starts right up. Cold temps may require a little enricher though. I prefer
to leave things the way they came unless there is compelling enough reason to
change them. Regular maintenance keeps things working properly.

From the "Tips Book #1": Broken throttle cable? You already carry a spare.
Just use the (appropriate) choke cable to replace it and go. (Of course this
only works if you still have the OE parts.)

Throttle cables are all new and the splitter clean and all are lightly
lubed.
There is a little play in the main cable which I will adjust out and I
squeezed the socket a tad. At least it's easy to pop back into place.
The police officer's spotlight helped last night!

The normal tension of the throttle shouldn't be enough to pop that
ball out continuously. As others have mentioned, it might be a throttle
cable going bad. However before you go out and buy new cables, check the
cable splitter attached to the frame rail under the tank. If this is
gummed up it could be the source of the problem, and a good lube might
be a cheap fix.
