We tried that with my pal's eldo. Basically enlarge the hole and shove
something to attach a hose to. His actually still pee'd all the way through
the hose and back onto the ground. He ended up running the hose into a catch
cup. Every once and a while just empties it back into the trans.
I would have not to use the level hole for a few reasons. 1) it's not
accurate, some were placed wrong, or was that the final drive? eh? who
cares. don't trust em. 2) the damn things strip out easy.

I would suggest using a ratio rite. Guru Dave tells the amount(in cc's,
therefore the ratiorite) in Guzziology. I would try this first to be sure
that the correct amount of oil is there and it's not puking it out due to
overfeeding.

I've read about this on a few bikes- some just seem worse than others.
You're already aware of this of course, but the tranny level should be
just a few mm below the inspection hole. That helps. The other thing
you can do is route a longer breather hose up the frame and then loop
(no pun intended) over and back down. Then the oil has to push up quite
a ways before blowing out. Or you could fabricate a breather box for
it. I saw one in the 'tips' book soldered up from a tobacco tin. Maybe
a tin box of mints would work similarly. Cant remember brand name, but
they are "curiously strong".
