I used to have this problem until I squeezed the cup around the ball on the end of the cable. It no longer 'jumps' out at the most inopportune times.
There are cables for the civilian and LAPD bars - did you get the right one?
There are two ways to take up slack in the cables: the adjuster on the 1->2 splitter, and at each carb. Dial out some of the slack at the carbs (equal lengths), and then do the 1->2 splitter adjuster. You need some length at the carbs so that you can introduce some slack in the cables at idle.

I ordered the 2 long cables that come from the handlebar controls for
the throttle and choke. Then the 2 short ones that come from the splitter and go to the choke and throttle on the carbs. They were

cables. I would think that there would be another adjustment other

the splitter end where the cable goes into the "H" contraption, but there seems like none. That little chain inside the throttle grip
