On the subject of the intermediate plate. You can check for flatness by
setting it on a piece of glass or the like. This will give you a good
idea of the flatness when it is cold. When heated up, it's harder to
tell. You may want to toss it in the oven and see if it warps when
heated. What temperature to use, I do not know but I would think that
400 degrees for an hour wouldn't do any damage. I haven't tried the oven
for this myself, as it just came to me.
