If you can understand your Amal concentrics, then you already understand
the Dellorto VHB. The only difference is that you have an accelerator
pump to deal with. Like Mike says, you should probably try adjusting your
mixture screws first, but based on the fact that you have an issue at
larger throttle openings too, I doubt that is your problem (at least all
of it). As Andy says, make sure your pilot jets are clean. Verify that
they are of at least stock size. They are the stock VHB29 carbs, right?
Check the main jets too, and the needle position. Based on the changes
you have made to the exhaust and air filters, I wouldn't be shocked if
you might not have to go up slightly on your jetting.
Oh yeah, better check for air leaks first, and it wouldn't hurt to check
your ignition timing too.

If they are all nice and clean INSIDE, then perhaps they just need some adjusting on the OUTSIDE. First, while you ahve them apart, I would move the needle to the highest position. Then, if when they are back together, I would check the idle mixture screw on the outside of the carb - the screw without the spring on it. Turn it out to enrichen the mixture.
