My $.02 worth. If your bike has Dellorto carbs check the enrichener
(choke) cables to ensure that there is about 2mm of free play in them
when the choke is disengaged. If you haven't already done so, check to
be sure that the choke plungers slide freely in their bores and that the
return springs are intact and present. Replace the choke plungers with
new ones (if you haven't already done so). The rubber on the old ones
gets hard and allows extra gas to be delivered to the engine at all
times (when operating). Replace the float needle with a new viton-tipped
one, and check float level.
My bet is on the cables or plungers causing the problem. I had the same
thing happen on my V-50 when I first bought it. Kept stalling out and
fouling one plug. It turns out that one of the cables was too tight.
