Brett,
I believe I read in one of the Dellorto manuals that the carbs can be tipped a small amount without affecting performance. (think about how far they tip when the bike is on the side stand.) I will have to dig it out and check for the exact figure.
I had the same problem. I did manage to get the carb a little further onto the intake and it only tips a tiny bit to clear the trans.
I also have a problem with the clearance of the pod filters with each other. I am using the cone shaped ones and they hit and slightly deform each other.
